Cabernet Sauvignon - a variety of French origin
Cabernet Sauvignon is a variety of French origin, from the region where the Bordeaux wines are prepared.
It acquired a large spread in the areas with moderate and warm climate. It is considered as raw material for the preparation of red wines.
The grapes are medium-sized or slightly smaller, of a pyramidal- cylindrical shape, often with stressed wings, with an average grain density.
The grape grains are middle-sized, circular, blue-violet, with an abundant layer of pruina and dense peel. The pulp is a little fleshy and has a slight taste of solonaceae.
It has a late ripening period. The buds are likely to open in a middle-late period. About 155-160 days pass from their opening until the technological ripening of the grapes (sugar content not less than 180 g/dm3), at the sum of the active temperatures 2850-2950 ° C.
The vines have a medium-vigorous growth. The twigs are, as a rule, long, with short or medium knots. The variety is adaptable to the moderate climate or areas with dry wind. In the northern regions, it prefers the sectors of normal exposure, on the slopes, and on stage - the stony or well clayed regions. It doesn't like the damp and fertile soil, which may cause insufficient twig maturity.

It has an average frost resistance (down to -22 ° C). The sensitiveness of the variety to the basic illnesses is normal.
The variety gives an intensely ruby-coloured wine, with a tendency to purple.
