Sauvignon

Sauvignon

At first, it was cultivated in Bordeaux, France, now it is widely spread in all the winemaking areas. It is a valuable of price for the manufacture of high quality wines with pronounced aroma of black currant and sparkling wines.

The grapes are medium-sized, cut-cone or cylinder in shape, often winged, with dense grains. The grains are middle to big, spherical, and green-yellowish, with a peel of medium density. The pulp is dense, sweet, with a flavored taste. It has an average period of ripening. About 140-145 days pass from the opening of the buds till the technological ripening of the grapes (sugar content not less than 170 g/dm3), the amount of active temperatures: 2,650-2,750 ° C.


The vine has a vigorous growth; the twigs grow vertically, the distances between the knots are short, dense foliage. It has high and regular productivity. The resistance of the variety to main diseases is middle, and even higher to the gray rot (Botrinis). Average frost resistance: (down to -20 ° C).

The wines produced from Sauvignon have a strong but delicate flavour, with specific pleasant taste. It is usually processed according to the white wine technology, acquiring in such a way a beautiful yellow color with greenish sparkles. Using it in merging allows improving the quality of other wines as well.
